Chili Lime Steak Bites

    Prepare steak: Cut the steak into 1-inch strips. Then cut again into 0.5-inch pieces. Place the steak into a small bowl and sprinkle with the salt, pepper, and garlic powder. Stir until completely coated. Add the chili paste & honey and stir to coat. (I'll note that I like to do this about an hour in advance in a container so I can marinate & leave it in the fridge).

    Prep pan: Place a 10-inch cast-iron skillet over medium-high heat. Once the pan is warm, add the oil. Swirl it around the pan & immediately add the steak in a single layer -- the pan should sizzle & hiss when added (if it doesn't, it's not ready).

    Sear steak: Allow the steak to sear for 1 minute before touching it. Flip the steak over using either tongs or a spatula. Allow the steak to sear on the second side for 1 minute. Remove steak from a pan and place either on a plate or large bowl. Add lime zest and lime juice to the pan. Stir to combine with the leftover liquid and pour over the steak.

Notes

We double this recipe at my house and it tends to feed us pretty well. Serve with rice & a veggie of choice for a simple dinner.
