No-Rise Pizza Dough

    Prep dough: In the bowl of a stand mixer fitted with a dough hook, combine the yeast, sugar, and warm water. Swirl with a spoon to dissolve the yeast. Let the mixture rest until the yeast becomes foamy and aromatic (about 3 minutes).

    Finish dough: Pour the olive oil, 3 cups of the flour, and the salt into the bowl. Mix on medium speed until the dough comes together in one ball, then knead for 3 minutes on medium to medium-high speed. The dough should be just a little bit sticky. Add the remaining flour 1 tablespoon at a time as needed.

    Stretch & top: Lightly flour the countertop. Form the dough into a ball, cover with a dish towel, and let rest for 5 minutes. Then, stretch the pizza to preferred shape & top as desired. Transfer to a pan or stone and bake the pizza at 450 degrees for 15 to 20 minutes (until golden brown).

Notes

For hand mixing: Add the yeast, warm milk, and honey to a large bowl. Once the yeast blooms (~3 min), stir in 3 tablespoons of butter, the flour, and the salt. Mix with a spoon for as long as possible, then turn the dough out onto the floured countertop and knead for 3 to 5 minutes, until the dough is slightly sticky.

Customisation: It is possible to customise this dough into a garlic-herb dough. Add 2 teaspoons of garlic powder, 1 tablespoon of Tuscan seasoning, and 1 cup of freshly shredded parmesan. Add herbs and spices with the oil and any cheese after the flour.
