Simple Spanish Rice

Sauté: Heat oil in medium saucepan or frying pan over medium to medium-high heat. Add diced onions and cook until softened.

Toast the rice: Add uncooked instant rice to saucepan. Stir continuously and toss gratuitously until rice lightly toasted. Do not overcook.

Add liquids & spices: Add tomato sauce, prepared broth, cumin powder, chili powder, and garlic powder. Add lime juice, if desired. Stir well to combine. Bring to a strong boil.

Simmer: Once a consistent boil is reached, allow rice to simmer on low heat. Cover with lid. Simmer times vary depending on rice & amount of liquid, but usually at least 10 minutes.

Rest: Remove from heat once rice arrives at a consistency you are happy with. Rest for five minutes, then fluff with a fork & serve.
Notes
Broth should be made from bouillon cubes. More may be necessary than originally specified to allow rice to simmer & absorb as much liquid as needed so that rice is not crunchy.
